The bbq chicken from the other night was very good, but the leftovers that went into these saucy sandwiches - 100% outstanding.
I had a little over half a chicken left over from the other night that I pulled into pieces and stirred with the left over sauce. The mixture was a little too dry for me though. I think a bbq sandwich whether pork, beef or chicken, has to be saucy enough that it's on the verge of running down your chin at any moment. So, I whipped up a sauce with Tabasco ketchup, brown sugar, Worcestershire sauce, red wine vinegar, Santa Cruz Organic apple cider, red pepper flakes, dry mustard and a few drops of smoke.
I didn't have any coleslaw on hand so we ate them with a little melted mozzarella and they were superbly mouthwatering. My hands and chin got messy too, so I have to give two big thumbs up on this one.



I soooooo lovethis recipe the best thing next to pulled pork sandwiches! Also a great use for leftovers!
